Black Bean Burger Triangles

Out of all the vegetarian recipes I've shared with you, this was by far my family's favorite. They couldn't stop reaching for more, and better yet, they didn't roll their eyes when I told them what I was cooking up for dinner!

I found this recipe from the MorningStar Farms website, where you can find TONS of other delicious recipes using their products by searching meal type, product, and other specifications. Since I love the Spicy Black Bean Burger patties, I chose the recipe called "Cheesy Black Bean Quesadilla Triangles". Not only was it easy to make...but it was fun!
