Black Bean Burger Triangles

Out of all the vegetarian recipes I've shared with you, this was by far my family's favorite. They couldn't stop reaching for more, and better yet, they didn't roll their eyes when I told them what I was cooking up for dinner!

I found this recipe from the MorningStar Farms website, where you can find TONS of other delicious recipes using their products by searching meal type, product, and other specifications. Since I love the Spicy Black Bean Burger patties, I chose the recipe called "Cheesy Black Bean Quesadilla Triangles". Not only was it easy to make...but it was fun! My boyfriend helped me cook these up, and we had a great time wrapping the triangles and serving them to my family. Click the link to read the recipe, and make it for dinner tonight!

Southern Style Breakfast Burrito

Brinner: Breakfast for dinner. It's a novelty that has captured the fascination of Americans for generations... 
...What is this, the Food network?

Everyone loves Brinner. There's something fun about eating certain foods most specifically used for breakfast at the wrong time- a silly way to break the rules. It's one of those "special" meals that you don't get to eat so often, yet it's so simple. That's what makes it a great dinner option for a busy mom, a college student (moi), or a practicing surgeon...



Or you know, you just feel like making something simple and you don't have any other food in kitchen.

I came up with this SUPER SIMPLE recipe because I had to make dinner for myself, but I didn't feel like doing anything fancy because I'd been at work all day. Also, the meal was just for me, not my family, but it could be easily made for a group. I was also limited by the ingredients available to me in my family's kitchen, and I didn't feel like another black bean burger on a bun, so I improvised and came up with....

Seitan Gyros with Cucumber Sauce

Does anyone else love Greek food as much as I do? Spinach pie, kalamata olives, tzatziki sauce- I can't get enough. So of course, I've been missing the ever-popular GYRO dish since becomming a vegetarian. Thank Zeus I found this recipe for vegetarian gyros!


I was thinking since my last post about trying Seitan for the first time (view it here) that the texture is very appetizing, and I thought I could use it in a gyro as a lamb meat substitute. Fortunately, the internet agreed with me, and I was able to find a DELICIOUS recipe for VEGAN Seitan Gyros!

Yummy Vegetarian "STROGO"

One of my favorite meals- adapted for my vegetarian lifestyle! Check out my recipe for a DELICIOUS "Beef" Stroganoff! For this meal I was inspired by PETA's "Classic 'Beef' Stroganoff" recipe, which was way too high in sodium and in not-so-natural ingredients. I adapted the recipe to include ingredients from my mom's own "Beef Tips & Noodle" recipe to create a more healthy, natural, and of course, vegetarian dish. For extra flavor and even less sodium, try making the cream of mushroom from scratch, or better yet, make a vegan version!

And believe me, for a college student who is used to having her dinners cooked for her by a dining hall or mother...this dish is easy enough to make and feed your whole family!

Since becoming a Vegetarian, Making Decisions is easier!

I've learned an important life skill since being a vegetarian-and that's how to be more decisive. It would take me longer to make up my mind on what to eat when I would go out to a restaurant as a meat eater, but now as a vegetarian, my options are narrowed. I still get delicious meals, but I have less overwhelming options to choose from. Narrowing down my choices has been an easy tactic to make decisions more quickly!
Decisiveness has been one life skill that I've learned better since becoming a vegetarian, but what have YOU learned from your vegetarianism or veganism?
